Cauliflower is a cruciferous vegetable which can reduce the risk of Cancer.
There are a lot of different recipes for cauliflower soup, but we find this one to be the easiest and fastest way to prepare it. As you can see there are really basic ingredients used to make this delicious soup. You can of course modify it and add other splices or flavors to it.
Makes six, 1 cup servings
- 4 cups cooked cauliflower flowerets.
- 1/2 cup shredded reduced fat Cheddar cheese
- 1 tablespoon all-purpose flour
- 1 1/3 cups buttermilk
- 1 cup fat free chicken broth
- 1 clove garlic, minced
- salt and pepper to taste
Place all ingredients in food processor or blender and process until smooth. Serve immediately or refrigerate if serving cold. If you decide to use it after refrigerating, never heat it up in microwave. You can add more broth as needed to thin.
